oil goes 2 ways
1 leaks
2 burns

your oil burned ...high speed thins oil plus after 1 qt/liter goes the others go super fast...also hot engine can cause seals to leak....5 w is very thin...used so carmakers can claim a fraction better mileage...i like 10 w winter....20 w summer...fill it up and keep close eye [if still running]

The oil didn't dry up.. the motor burned it.. driving on the highway put additional strain on the engine and if your rings or valves are worn, it will suck the oil in and burn it...are you using 5w50 because of pressure problems? if not , the heavy oil may be causing the problem ... most cars recommend 5w30 or 10w30...

You were driving fairly fast and 5-50 is not thick oil. I would use 20-50 for high speed driving, or 10-40 for overall use. Change your oil about 3 times a year.

Oil does NOT dry up or dissapear into thin air....it has either leaked out...was pushed out under pressure.. or your engine burnt it
If you park overnight is there a small oil puddle under car..????
if so slight oil leak (oil seal/gasket replacement)
Does oil drip from under car when car is running and warmed up???
oil leak under pressure( replace seal)
Does your car blow a lot of blue smoke with high revs..??
if so your rings are worn..oil is getting past them and is being burnt
if so replace rings, bearings =$$$$$$$$
Good luck

could be the engine is burning oil (if it is a diesel will be most likely and it is normal)

or

your car might have an excessive engine oil leak ....

in both cases is bad, better check it up and have the problem rectified before you burn / cease the engine.

would be interesting to know what type of car please ???
good luck mate.
